This seemed super simple to make. The topping is yummy and – as is often the case – we all had our fingers in the pan. KC commented that he has a super recipe for a home baked pound cake and I guarantee that would make this even better. That said, one comment we make each week – for the most part, and despite this week’s disappointments – is that the Mimi recipes are easy and good.
This week I have included a remembrance from Shirley (aka Mom) about the evening meal while she was growing up. And I remember during my childhood, that we always had a treat before going to bed. Sometimes – and most memorably – it was popcorn and apples or ice cream with hot fudge and peanuts – while we watched Mash on Thursday night upstairs in that tiny TV room. Dad in his lounger, Mom in the rocking chair and Jeff and I on the couch. This recipe is “Good!” – as Mimi proclaims in the last line of the recipe… But also simple. Most often, the best things are.
Pineapple Cake
Buy 1 loaf cake (about a pound)
1 cup sugar
3 eggs
1 teaspoon lemon juice
salt
1 small can crushed pineapple
Whipped cream – a small jar. Cut the loaf cake into 4 layers. Cook sugar, eggs, lemon juice until thick – about 15 minutes and then cool. Once cooled, add whipped cream. Put the mixture between the layers and over the top and down sides. Good!
I have been meaning to tell you (since you wondered who had the sweet tooth with the dessert recipes)…. We had dessert every night. There was never a meal without dessert – and always once a week there would be bread pudding because all good New England housewives saved the crusts and stale pieces to make the bread pudding – waste not, want not!

Spirit of Mimi
This weekend I am in Tahoe celebrating my dear friend’s (CNT) daughter’s wedding. At the rehearsal dinner, Jessa’s (the Bride) Grandmother stood, walked up to the microphone and gave Jessa a toast that left not a dry eye. Her grandmother is 92 years old. Each year, she plans one great vacation to take everyone – her children, her grandchildren and their children – somewhere. Last year they went on a cruise to Alaska, and to hear CNT tell it – the only thing she didn’t do was the zipline. I love the engagement with life and the commitment to her family. She is truly a remarkable woman who, like Mimi, was married to her husband for over 60 years.

Funny thing… she doesn’t like this photo. She wondered why I couldn’t have made her look just a bit better. Funny thing…. I think she looks beautiful. All I can see is my grandmother and all the wonderful things she has given me through my life. Perspective is a gift.
Friends are the new Family….
I don’t think I had realized until dinner that night, how long KC and PC have been friends. Not dissimilar to the amount of years that PD and I have been friends. I have been privileged in my life to have had some dear friends make the journey with me… some I speak to every day (PD) and some infrequently (JW, CNT). The moment though, when we connect, is as though it had been the day before and time is meaningless. These friendships are indeed timeless and carry with them precious memories. Thank you PC and KC for sharing a bit of your journey and for joining me on mine. xoxo
