Toasted bread with Ricotta, Basil, Salt and Pepper and a bit of olive oil…
The simplest things are just the best. DC brought all the fixings and introduced me to this tasty treat. It was a perfect appetizer while the pasta was cooking. Great with a hearty red and good friends. Thanks DC.
Meatballs
When shopping for the meatballs, I couldn’t find ground veal. The butcher recommended Lamb. I thought the meatballs were amazing with a nice rich flavor that came from the combined three meats mixed with whole wheat bread crumbs. They add a nice nutty flavor that mixes well with the meat. Really good!
Spaghetti and Meatballs
Sauce
1 can tomatoes (13 oz)
3 cans (8 oz) tomato paste
2 1/2 cups beef broth
1 onion minced
1 clove garlic minced
1/4 lb salt pork minced
2 Tablespoons olive oil
2 Tablespoons parsley
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon sugar
1/2 teaspoon oregano
1 bay leaf crushed
Meatballs
1/2 lb. beef
1/2 lb. veal
1/2 lb. pork
2 beaten eggs
1 teaspoon salt
1/2 teasppon pepper
1/4 teaspoon oregano
1/4 cup bread crumbs
1/3 cup grated cheese
Sauce
Combine tomatoes, tomato paste, beef broth, and bring to a boil. Saute onion, garlic and salt pork in hot olive oil. Add to tomato mixture. Add remaining ingredients except cheese and simmer covered about an hour stirring often.
Meatball
Combine all meat ball ingredients. Mix thoroughly with hands. Shape in balls. Add to sauce and simmer covered for about 40 minutes stirring.
Progress
Measuring success one meal at a time. We are about 1/4 through Mimi’s recipes. The summer is over and schedules are heating up but I remain committed to continuing and hope that my PM buddies are as well.
Pumpkinhead
The pumpkin is a signed and original Ellie. Hand drawn and hand appliquéd and the perfect resting place for Mr. Wong’s cap. He called in to join us at the finish of the Singapore Formula one race – the first he had caught in person – and before he headed off to Shanghai to open our new flagship store. Also worth noting – he called this past Wednesday – just so he wouldn’t miss anything. While we didn’t have a PM, I have to commend his loyalty and commitment. And to recognize how dear I think it is that he continues to be a part of our group despite the miles and time between us. Thank you SW. It means a lot!
The last straw
Biscuit #4 (but who is counting) …. This time with the lemon curd, strawberries and ice cream. Frankly at this point eyes were bigger than stomachs and while the desire was there, the capacity wasn’t. Sadly, this went to waste, or to waist as the case might be. Those biscuits were a clear hit!
Little Fish and Angry Bird
Lounging by the pool became just too much for a little one to resist and before we knew it Ellie was splashing around with the pool float. Unencumbered joy and simple pleasure as she walked to and fro knee deep in the water under PC and KC’s watchful eye.
The highest form of flattery
I love the way Ellie is looking at JC and mimicking the way she is reclining. I get tickled watching Ellie as she notices things and adopts them.
Silliness
Its funny, after all these years, its still the silliest things that make us laugh. And laugh we do at the silliest things. I don’t even recall at what we were giggling but the photo made me smile. Sitting by the pool – relaxed and laughing – now that is what life is about. Thank you my friend.
