The recipe for the apple crisp came from the Betty Crocker cookbook for girls that my Mom gave to me when I was about 7. In our family it has touched 3 generations and now my nephew Joey refers to it as ”Nan’s amazing apple crisp”.
This night, Chris Jagger, made the now doubly famous crisp – and more importantly it has made its way into his family. I love the fact that he feels, as I do, that these recipes are more the better for the love and history that goes into each one.
Chris isn’t often able to join us as our regular outings are on Wednesday night and, as the morning drive time host of 102.9NOW, his schedule is pretty crazy. Nice though, the way his schedule dovetails with Ellie’s and let’s us share PC for awhile.

Renamed “PM Keepers Friend”
We had a good giggle after dinner… the kitchen was a bomb of pots, and pans, dishes and glasses. Like no PM before. And ironically, PC and I had commented earlier that we were going to clean as we went…. and we did. PC loves to clean. I don’t think I have ever seen anything like it. Frankly, I thought I was married to the tidiest man on the planet but the standard by which I measured everyone has now changed.
The clean up from the grill was a bit… challenging. So after a good nights soak I took the Bar keeper’s friend to it and presto. Clean enough to measure up to either the CF scale or the PC scale.
Oregano French Dressing
4 Tablespoons oil
2 Tablespoons vinegar
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon dry mustard
Pepper
1/2 clove garlic minced
1/4 teaspoon sugar
Combine all ingredients in jar and shake well.
Chill
Truth be told… The state of our refrigerator has always been a bit of a joke. We usually have it stocked with bottles of water, some mustard – an occasional condiment, some yogurt, berries and … that is about it.
Well, since PM lots of things have made their way into the refrigerator. My mother, who swears that in an emergency her house is the place to be and that one could live off her pantry for months – would be very proud.

This week, JK and KK joined us. It had been much too long between nights out and a good visit was in order. There is such a nice energy whenever one spends time in their company. It was great having them join in and add to the fun. Good laughs were had by all.
Ricer’s are the Bomb
I love mashed potatoes. And there is nothing better for making the perfect mashed potato than by using the “potato guillotine” (see post of August 11th) followed by a ricer. A little cream… a little butter (ok, maybe a lot of butter), some salt and pepper and you have the perfect compliment to pretty much any meal and so very good with the meatloaf.

Meatloaf
I used organic ground beef and unseasoned pork sausage with whole wheat breadcrumbs. The sauce was made with ketchup and a multi grain mustard. PD grilled it using a special meatloaf pan from Williams and Sonoma. It is open on the bottom to let the meatloaf drain and encourage a nice smokiness from the grill. He did a stupendous job, while picking his fantasy football team. Multi tasking at its best. I thought it was pretty tasty.
Ketchup Glazed Meatloaf
1 egg slightly beaten
1/3 cup milk
1/2 teaspoon salt
2 Tablespoons minced onion
2 cups breadcrumbs
Ketchup – 1/3 cup + 2 Tablespoons
2 Tablespoons Brown sugar
2 Tablespoons Prepared mustard
1 lb pork sausage meat
1 lb ground beef
Mix first three ingredients. Add meat, salt, onion, and 2 Tablespoons ketchup. Mix lightly but well. Shape into loaf in shallow baking pan. I’ve always made a round loaf, not too deep- 2” maybe or so.
Mix 1/3 cup ketchup, brown sugar and mustard . Spread on the meatloaf. Bake in 350 degree oven for about an hour and 15 minutes. 6-8 servings.
