Roasted Potatoes
I’ve become quite fond of these tiny little potatoes. There was some doubt as to how they would do with the roasting but frankly, I thought they did just fine.
In a 350 degree oven I set the roasting pan for about 15 minutes so it got nice and hot. While heating, I tossed diced onions, the potatoes, some rosemary, salt and pepper with olive oil – just enough to lightly coat. I then added to the hot pan and roasted for about an hour stirring occasionally. The result – crispy skins that popped when you ate them.
