Pulled Pork

I can’t believe I didn’t shoot the finished product!  But once it was done, it was camera down and let’s eat!

Shirley (aka Mom) and I had been chatting about my slow cooker.  I have to say, I really do just love it!  It is super simple and every dish I’ve made thus far has exceeded my expectations.   And this time was no exception…  It is the Breville brand and is available at Williams and Sonoma.

But, I digress.  Based on Mom’s recommendation I bought pulled pork BBQ starter – also from Williams and Sonoma.  The basic recipe is 3 lbs pork shoulder, about a 1/2 bottle of the starter and 8 hours of slow cooking.  For Brunch, I tripled the pork and we had more than enough for our 9 people and pretty much everyone went home with leftovers.

After removing the pork from the slow cooker, CF took a fork and shredded the meat.  We chose to top with a favorite bbq sauce.  We drained the leftover starter, and returned the dressed pork bbq to the slowcooker and about 30 minutes before serving warmed it on low.  I thought it was perfect – and even more so when mixed with the biscuits and the coleslaw.

While not really a “Mimi” recipe, the recommendation from Mom made me realize that while I am committed to working through my grandmother’s recipes,  I have no record of my mother’s.

So every now and then, there will be a Shirley recipe tossed in for good measure….

Thanks Mom for the recommendation and for all those great meals you have made for us through the years.  ILY.
