English Lemon Cheese (aka Lemon Curd)

1 cup sugar

3 eggs well beaten

2-3 lemons rind and juice

1 Tablespoon butter

Put altogether in double boiler

Stir all the time until as thick as honey.  Pour into a glass jar with cover.
