Banana Cream Pie
1/2 cup sugar
1 Tablespoon butter
5 Tablespoons flour
1/4 teaspoon salt
2 cups milk
1/2 teaspoon vanilla
2 egg yolks slightly beaten
3 ripe bananas
1 baked 9” pie shell
Combine sugar, flour and sale in top of double boiler. Add milk slowly mixing well. Cook over boiling water till well thickened. Cook 10 minutes longer, stirring occasionally. Stir small amount of hot mixture into egg yolks then pour back into remaining hot mixture while beating vigorously. Cook 1 minute longer. Remove from heat and add butter and vanilla. Cool. Peel and slice bananas into pie shell and cover with filling. Top with meringue or whipped cream stiffened with meringue. 325 for 15-18 minutes.
