Heavenly Pie

4 egg whites

1/4 teaspoon cream of tartar

1 cup sugar

Filling

4 egg yolks

1/2 cup sugar

3 Tablespoon Lemon Juice

rind of 2 lemons

Beat 4 egg whites till frothy.  Add 1/4 t cream of tartar.  Beat very stiff.  Add 1 cup sugar slowly.  Bake in 9” pie plate for 1 hour at 275 overn.  Just pour into pie plate even.  It’s real funny but when you take pie from oven and cool on a rack it cracks and settles in center.  After it’s cool, spread following over—-  Beat 4 egg yolks till thick.  Add 1/2 cup sugar slowly.  Add 2 Tablespoons lemon juice and rind of two 2 lemons.  Cook over hot water till  VERY thick.  (You cut down thru it, it separates.  Spread over cool pie.  Whipped cream over this.  Its fun to make and absolutely delicious.
