Is there anything better than Parmesan Cheese? In my educated opinion – not much. It is the perfect addition to nearly any Italian meal – tastes great alone or with some fine olive oil and a nice crusty bread. Frankly, I have landed in cheese heaven as Annie has kept me stocked with her monthly travels back and forth to her home in Florence. For convenience sake, in most of the PM’s we have used the pre-shredded variety from Whole Foods. But on this night, in the spirit of the evening, I shredded my own. Without a doubt, divine and truly a special ingredient for the risotto. And while I am all for some convenience now and again, the real deal shredded by hand wins by a long shot.
